This is how Miracle Berry works:
On your tongue you have taste buds with several different types of receptors. They help us distinguish between sweet, sour, bitter, salty and umami.
The protein responsible for the effect of miracle berries is called miraculin . It attaches to the receptors on the tongue, almost like a key in a keyhole. and the "keys" from the miracle berries fit best in the sweet receptors. When the miraculin is then exposed to acids, i.e. low pH, the key is turned. Then the sweet receptors fire signals to your brain, which thinks your tongue is bathing in sugar.
It's a wonderfully quirky and whimsical experience!
